Where: Hotel du Vin & Bistro, Parabola Road, Cheltenham

When: Available now

With long, sunny nights ahead, Hotel du Vin and Bistro in Cheltenham has unveiled its delicious new summer menu.

Designed for lazy afternoons and evenings relaxing with friends over a glass of wine, the menu is packed with fresh and light flavours.

Starters on the new menu include a Severn and Wye Smoked Salmon Classic, £9.50, which is smoked in front of you, a Chicken Liver Parfait, £7.95, served with a hazelnut brioche muffin and tomato chutney and there's a whole host of innovative new dishes to try, including Salt Baked Beetroot with Whipped Goat's Cheese, £6.50, sumac and Greek yoghurt.

Main courses range from a Rack of Yorkshire Dales Lamb, £26.95, served with a pea, bean and goat's curd salad to Sea Bass, Panzanella Salad, £16.95, and nasturtium pesto and butter.

For those who don't want meat, the Aubergine Caponata and Grilled Halloumi, £13.50, is a wonderfully-spiced stew with capers, olives and tomatoes, served with flat breads and halloumi which gives it a delicious saltiness.

To round off your meal, dainty desserts include a delicate tart of finely-sliced apples with Calvados ice cream, a lemon meringue cheesecake with elderflower jelly, the Italian-favourite affogato and a pineapple and coconut kulfi.

Each has been paired with a wine which perfectly complements the flavours.
