Dorian Kirk is one of the businessmen behind the reinvigorated Dr Foster pub at Gloucester Docks which has recently had a £350,000 refurbishment.
Since launching ART Hospitality Group in 2013 with his brother Edwin, Dorian has seen their restaurant group A Rule of Tum expand to seven sites, starting in Hereford and expanding to Worcester and now Gloucester, with a soon-to-be opened venue in Birmingham.
"We've got a phenomenal team around us and it's really exciting," says Dorian. "We currently employ about 140 staff with a turnover roughly of £2 million gross. It's going from strength to strength."
Asked how he copes with rising costs, particularly in the light of this week's Budget, Dorian speaks very openly, describing some of the Chancellor's measures such as the employers' national insurance hike as "insanity".
"I just think the Labour government are so out of touch with small SMEs, it's quite shocking," he says. "It's very scary times for people. We think it might cost another £2,000 to £2,700 per employee per year. That's a lot of money. We are going to have to increase our prices."
Despite this, you can't help but see Dorian's huge love of the hospitality industry as he talks enthusiastically about the project to bring Dr Foster's back to life.
