Forage for your lunch at Eckington Manor

Learn all about the best wild foods to cook with and make your own gin at a new seasonal foraging workshop.

Guests at Eckington Manor, near the Cotswolds, will prepare and transform foraged goods into preserves, drinks and accompaniments for a delicious three-course lunch, with the option to stay overnight at the Manor too.

The country house hotel has joined forces with foraging expert, Liz Knight, who will host the Seasonal Foraging Workshop on Saturday, September 9.

Liz has six years' experience leading forages and educational outdoor workshops and started her one-woman business, Forage Fine Foods, in 2011.

Judy Gardner, Owner and Founder of Eckington Manor, said: "We are delighted to welcome Liz to Eckington Manor to host this unique event with us.

"This is a great chance for visitors to discover the sights, smells and tastes of one of the finest and bountiful areas of countryside in the UK.

"The Vale of Evesham is world-renowned for its productivity and with Liz's expertise, we hope to help visitors find out a little more about foraged food and introduce them to our lovely grounds at the same time.

"There is a huge interest in wild food at present, however, not all berries, roots and leaves are safe to eat which is why courses such as these are so important."

The course begins with a guided forage by Liz to discover edible treasures in the countryside surrounding Eckington Manor. Back at the Manor Cookery School, guests will learn how to cook with their haul in a hands-on workshop, before tucking into the morning's bounty in a three-course seasonal lunch.

After creating personalised gin and syrup to take home, guests will be treated to a slice of Liz's homemade wild cake and tea to finish the day.

Places cost £140 per person, including a morning walk, workshop, gin making and three-course lunch.

From £555, guests can combine the Seasonal Foraging Workshop with an overnight stay at Eckington Manor, based on two people sharing a luxury room on a Dinner, Bed and Breakfast basis.
